Keto Chocolate Chip Cookies

If you are eating keto, paleo or low-carb, cookies typically don't fit into your diet. Enter these amazing, chocolatey and gooey chocolate chip cookies. Full of amazing and simple ingredients, these are about to be a staple in your kitchen. Add a few scoops of Keto Cocoa for a powerful boost of adaptogens and mushrooms. Not to mention, these sweet treats take less than 30 minutes, so you don't need to stress in the kitchen. Feel free to add chocolate chips, nuts or any other mix-ins to switch things up!

Keto Chocolate Chip Cookies

Serves: 24 cookies

Time: 25 minutes

INGREDIENTS:

  • 2 cups almond flour
  • 5 scoops Keto Cocoa
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • ½ cup coconut oil, melted
  • 1 tsp pure vanilla extract
  • 2 eggs
  • ½ cup unsweetened chocolate chips

 DIRECTIONS:

  1. Preheat oven to 350°F
  2. In a large bowl, mix together almond flour, Keto Cocoa, baking powder, and sea salt. Set aside.
  3. In a separate bowl, mix together coconut oil, vanilla, and eggs
  4. Incorporate the coconut oil mixture into the flour mixture until a thick batter forms
  5. Stir in chocolate chips
  6. Sccop and roll the batter into 24 equal-size balls and gently press down with the back of a spoon
  7. Place 2 inches apart on a rimmed baking sheet lined with parchment paper
  8. Bake for 10-12 minutes
